Honey Kölsch Gochujang Wings Try your hand at Chef Yvonne's wings made with gochujang, honey, and our Collective Action Kölsch. And don't forget to take a picture and tag us on social media!
Ingredients
Vegetable oil for fusing
1 tsp kosher salt
1/2 tsp fresh ground pepper 1/2 tsp baking powder 1 tbsp freshly grated ginger or 1 tsp ginger paste 2 lbs chicken wings Sauce 3 tbs butter 2 small dried red chilis, chopped 1 tbsp ginger 3 cloves garlic, minced 1/4 c gochujang paste 2 tbs ketchup 1 tbs soy sauce 1/4 c Equity's Collective Action Kölsch 1/4 c honey 2 tbsp packed brown sugar Garnish 1 tbsp toasted sesame seeds 1 green onion sliced Directions 1. Dry chicken wings completely and place into a large bowl. 2. Add grated ginger to chicken, and mix well. 3. In a small bowl combine driy ingredients; salt, pepper, baking powder and garlic powder. Add dry ingridients to the large bowl and coat the chicken evenly. Set aside 4. Add approximately 4 cups of vegetable oil to a medium saucepan and heat to 325°F. 5. Carefully add chicken to oil but be careful not to overcrowd. Fry in batches if needed. 6. Fry for 12-15 minutes 7. Remove chicken and place on a cooling rack or plate line with paper towels. 8. Increase oil to 375°F and do a second fry for approximately 4 minutes. 9. Move to a cooling rack to drain while you make the sauce. 10. In a large saucepan, melt butter then add chopped chilis, ginger and garlic. Cook until fragrant for about 1 minute. 11. Add gochujang, ketchup, rice vinegar, soy sauce, Equity beer, honey, and brown sugar. Bring contents to a light simmer for 5 minutes. 12. Once mixture has thickened, remove from heat and toss the wings. Plate and garnish with sesame seeds and green onion.
